LA MAREA AT THE TIDES SOUTH BEACH TO LAUNCH MAY 30, 2007; EXECUTIVE CHEF PIETRO ROTA TAKES THE HELM

April 2007 (Los Angeles) - Kor Hotel Group, the Los Angeles-based hotel operator, announces the upcoming opening of its newest restaurant, La Marea, in the newly re-designed Tides South Beach, the flagship property for Kor's recently launched coastal Tides brand. Meaning ebb and flow of the tides in Italian and Spanish, La Marea (pronounced La Ma-ray-ah) will feature Mediterranean-style fare created with seasonal ingredients and accented with Northern Italian flavors and flare. The new venue is set to open on May 30th, 2007.
At La Marea's helm is rising culinary star Executive Chef Pietro Rota, who comes to The Tides South Beach from West Hollywood, California's Il Sole restaurant. Born in Milan, Italy, Rota apprenticed in restaurants and hotels in Italy, London, Germany, France and Brazil before moving to California and finally settling in South Florida. Inspiring diners with a cuisine all his own, Rota combines only the freshest meat products and vegetables with local ingredients and influences from his Mediterranean and Northern Italian heritage. Fresh seafood, flown in daily, is Chef Rota's passion. His imported Dover Sole, pan seared to perfection, then filleted tableside and served with Zesty Lemon Butter and Organic Vegetables, is surely destined to become La Marea's signature dish.
Menu: Chef Rota's diverse menu will allow guests to enjoy Mediterranean-style specialties prepared to their precise satisfaction. Appetizers will include an array of both cold and hot delicacies: Shaved Bottarga and Fava Beans with Mint and Oregano and Marinated Anchovies with Cured Lemons and Toasted Garlic will lead the cold selections, while hot appetizers will sizzle with such choices as Littleneck Clams with Chorizo, Basil, Chilies and Garlic and Black Truffle Ravioli with Soft Poached Egg and Taleggio Cheese. Chef Rota's salads and side dishes are sure to be as enticing as his main dishes. Salads will include Red and Golden Beets with Walnuts and Humbolt Fog Goat Cheese as well as Warm Asparagus with an Anchovy Vinaigrette. Side dishes will feature Broccoli Rabe "Agro Dolce" and Soft Polenta with Parmesan Cream.
Vast selections of fresh fish will be available daily, including whole Dorado, Hawaiian King Prawns, Sardines or Loup de Mar filleted tableside with a choice of rare salts and olive oils. Fillets of the finest local fish, such as Tuna, Wild Salmon, Diver Scallops and Mahi Mahi will be flash grilled, wood roasted or steamed. Florida Black Grouper can be enjoyed in Chef's signature dish, cooked in papillote (parchment paper) with Crushed Tomatoes, Basil and Organic Vegetables. Entrées will be artful creations with daily pasta specials, fresh poultry and tantalizing meat selections such as Duck Confit on Warm Lentil Salad with Foie Gras Essence and Fettuccini prepared with Maine Lobster, Mint, Pepperoncini and Cream.
Setting: Upon entering The Tides’ spectacular new lobby, guests will be immersed in the pulsating energy of South Beach with all its sexy, tropical exuberance. The Tides’ impressive offerings, which include the new Martini Bar, the elegant La Marea restaurant and The Tides’ signature Coral Bar (debuting in August), will greet guests with a provocative new design scheme created by Los Angeles trendsetting designer Kelly Wearstler.
The rich texture and patterns of rope will provide a dominant motif for The Tides’ new restaurant. La Marea is set to be adorned with over-sized, reflective pendant lights, bleached wood chairs carved to resemble rope, theatrical hooded armchairs, animal hair treatments such as faux hide and suede and polished brass accents throughout. Smart rows of over-sized faux tortoise shells will glisten along the walls. Overlooking the hotel's front terrace through floor-to-ceiling windows, the restaurant will provide dramatic views of the Atlantic Ocean. The relaxed terrace is shrouded in greenery, countering its former minimalist quality, with layers of trees and umbrellas obscuring Miami's sun and crowded streets. Private dining spaces encircle an open-air lounge, while art deco brass detailing pays homage to the hotel front's trademark, historic lantern.
An intimate space focused entirely on exceptional service, design, food and libations, La Marea at The Tides is poised to become one of South Beach's premier dining destinations.
La Marea is located at The Tides South Beach, 1220 Ocean Drive, South Beach, Florida 33139. La Marea will be open for breakfast, lunch and dinner daily. Breakfast will be served from 7:00 a.m. to 11:00 a.m.; Lunch will be served from 12:00 p.m. to 5:00 p.m.; Dinner will be served from 6:00 p.m. to 11:00 p.m. Reservations are suggested at 305-604-5070.
